Assistant Governor Sargis' grandfather George, his father Melick and his maternal grandfather Kepha were all Court physicians. When Chingis Khan first conquered their country, the crown prince Tului fell ill. Sargis' maternal grandfather administered sherbet while the bishops and presbyters and congregation prayed, whereupon the prince recovered. Sargis was appointed the Imperial Sherbet-maker and Tarkahn of the Christians of his native place.
In 1268, Kublai Khan ordered Sargis to proceed to the Imperial Court. Sargis went forward post-haste to present sherbet and was rewarded very liberally. Sherbet is made from fragrant fruits by boiling them and mixing with honey. Sherbet-man is the name of an office. Sargis had the hereditary skill in the method of making sherbet, and it had often miraculous effect. The Khan specially granted on him a gold tablet and made him to devote himself solely to the office. Sherbet-making was a hereditary business to be carefully fostered, and must not be decayed.
